Greek Steak Wraps

Ingredients:
  • (1 1/2 Tbsp.) olive oil
  • (1 Tbsp.) red wine vinegar
  • (1 1/2 tsp.) crushed garlic
  • (1 tsp.) dried oregano
  • (1/2 tsp.) kosher salt
  • (1/2 tsp.) freshly ground black pepper
  • (3/4 lb.) flank steak
  • (3/4 cups) fat-free Greek yogurt
  • (1 small) cucumber, grated
  • (2 Tbsp.) fresh mint leaves, chopped
  • (1 small) yellow bell pepper, cut into thin strips
  • (1 small) orange bell pepper
  • (1 large) onion, cut into thin strips
  • (4) whole-wheat rosemary sandwich wraps, warmed
  • (8) Romaine lettuce leaves

Greek Steak Wraps

Flank steak brushed with garlic and vinegar served on rosemary wraps with sauteed bell peppers and a cucumber yogurt sauce.

    Instructions

  1. 1Whisk together 1 Tbsp. oil, vinegar, 1 tsp. garlic, oregano and 1/4 tsp. salt and pepper in a small bowl. Use a pastry brush to brush both sides of the steak, set aside 10 minutes.

  2. 2Preheat indoor grill pan to medium heat.
  3. 3Combine yogurt, cucumber, mint and the rest of the garlic, salt and pepper in a small bowl.
  4. 4Grill steak 12-14 minutes, turning once, set aside 5 minutes. Place a large nonstick skillet over medium-high heat. Add rest of oil. When hot, add peppers and onions, saute 8 minutes.

  5. 5To assemble wraps: fill each wrap with 2 lettuce leaves, sliced steak, peppers, onions and yogurt sauce. Roll and serve.
