Instructions
1Place a large saucepan over medium heat. Add butter. When melted, add onion and cook 2 minutes, stirring every so often.
2Meanwhile, place flour in a medium bowl. While whisking, stream in broth until flour dissolves. Add to pot with milk. Cook another 5-7 minutes, stirring until thickened.
3Add broccoli, salt and pepper, simmer another 5 minutes. Puree in a blender in batches, pour back into pan over low heat. Add cheese and cook until melted. Serve and enjoy!
