Ingredients:
  • (1 cup) frozen corn kernels
  • (2) green onions, thinly sliced
  • (1 tsp.) ground cumin
  • (1 1/2 cups) salsa
  • (15 to 19 oz. can) low-sodium black beans, rinsed and drained
  • (4) 96% fat-free burrito-size flour tortillas
  • (8-oz. package) 2% reduced-fat Mexican cheese blend, shredded
  • (2 Tbsp.) fresh cilantro leaves, chopped

Layered Mexican Veggie Pizza

Black beans and corn layered between flour tortillas with shredded cheese and baked until crispy.

    Instructions

  1. 1Preheat oven to 450°F. Spray a large baking sheet with cooking spray.
  2. 2Spray a large nonstick skillet with cooking spray and place over medium heat. Add frozen corn, green onions, and cumin. Cook 3-5 minutes, stirring occasionally. Take off heat, add salsa and beans.

  3. 3On greased baking sheet, layer 1 tortilla, 1 cup bean mixture and 1/2 cup cheese. Repeat twice. Add another tortilla and rest of cheese.
  4. 4Bake 10 minutes, add cilantro. Cut and serve.
