Reuben Chicken Quesadillas

Ingredients:
  • (1/3 cup) bottled Russian dressing
  • (4) flour tortillas (8 in. diameter)
  • (6 oz.) reduced-fat Swiss
  • (1 cup) low-sodium sauerkraut, drained
  • (6 oz.) lower-sodium deli chicken breast, sliced
  • (1 tsp.) canola oil

Reuben Chicken Quesadillas

Chicken, Swiss, sauerkraut and Russian dressing baked in a flour tortilla until crispy.

    Instructions

  1. 1Preheat oven to 425°F. Spray a baking sheet with cooking spray.
  2. 2Top each tortilla evenly with dressing, then evenly divide swiss, sauerkraut and chicken onto half of each tortilla. Fold and place on greased baking sheet.

  3. 3Place canola oil in a small bowl and use a pastry brush to brush the tops of each tortilla. Bake 10 minutes. Let cool 5 minutes, then cut and serve.
