Shrimp and Couscous Packets

Ingredients:
  • (8 cups) baby spinach
  • (1 cup) couscous
  • (1 lb.) medium shrimp, shelled and deveined
  • (1/2 cup) fresh cilantro, chopped and divided
  • (1 Tbsp.) extra-virgin olive oil
  • (3/4 tsp.) salt, divided
  • (1 large) mango, peeled and diced
  • (1 medium) avocado, diced
  • (1 medium) tomato, diced
  • (1/4 cup) red onion, chopped
  • (1/2) jalapeño chile, seeded and finely chopped
  • (1 Tbsp.) fresh lime juice

Shrimp and Couscous Packets

Herb shrimp grilled in foil packets with fluffy couscous and served with a fresh mango and avocado salsa.

    Instructions

  1. 1Preheat grill to medium-high heat.
  2. 2Cut four pieces of foil (18 in. long each), spray one side with vegetable cooking spray. Lay out on a flat surface.
  3. 3In a small bowl, combine couscous and 1/4 cup water. In another bowl, toss shrimp with 1/4 cup cilantro, oil and 1/2 tsp. salt.
  4. 4Place 2 cups spinach on one half of each piece of foil, top with couscous and surround with shrimp. Fold and seal all edges of the packet.

  5. 5Grill about 10 minutes with the lid down, or until packets puff up.
  6. 6Meanwhile, in a large bowl, mix together 1/4 cup cilantro, 1/4 tsp. salt, mango, avocado, tomato, onion, jalapeño and lime juice. Serve packets with mango salsa.
