Shrimp and Couscous Packets
Ingredients:
- (8 cups) baby spinach
- (1 cup) couscous
- (1 lb.) medium shrimp, shelled and deveined
- (1/2 cup) fresh cilantro, chopped and divided
- (1 Tbsp.) extra-virgin olive oil
- (3/4 tsp.) salt, divided
- (1 large) mango, peeled and diced
- (1 medium) avocado, diced
- (1 medium) tomato, diced
- (1/4 cup) red onion, chopped
- (1/2) jalapeño chile, seeded and finely chopped
- (1 Tbsp.) fresh lime juice

Instructions
- 1Preheat grill to medium-high heat.
- 2Cut four pieces of foil (18 in. long each), spray one side with vegetable cooking spray. Lay out on a flat surface.
- 3In a small bowl, combine couscous and 1/4 cup water. In another bowl, toss shrimp with 1/4 cup cilantro, oil and 1/2 tsp. salt.
- 4Place 2 cups spinach on one half of each piece of foil, top with couscous and surround with shrimp. Fold and seal all edges of the packet.
- 5Grill about 10 minutes with the lid down, or until packets puff up.
- 6Meanwhile, in a large bowl, mix together 1/4 cup cilantro, 1/4 tsp. salt, mango, avocado, tomato, onion, jalapeño and lime juice. Serve packets with mango salsa.
