A brown-sugar rubbed pork loin simmered in a sweet and tangy sauce, shredded and served on whole-wheat buns.

Instructions
1In an electric slow cooker, combine 3 Tbsp. brown sugar, onion, Mexican seasoning, Worcestershire sauce, cider vinegar, molasses, dry mustard and tomato paste.
2In a separate bowl, combine 1 Tbsp. brown sugar, pepper and salt. Cut the pork loin into 4 even pieces, then coat pork loin with the mixture, rubbing it into the meat.
3Add meat to slow cooker, coating with sauce. Cover, cook on high for 1 hour.
4After an hour, reduce heat to low and cook 7 more hours or until tender.
5Transfer pork onto a cutting board. Use 2 forks to shred the pork, then place it back into the cooker, stirring to combine it with the sauce.
6To assemble sandwiches, top each bun half with 2/3 cup pork and cover with other bun half. Enjoy!
