Ingredients:
  • (1/4 cup) packed brown sugar, divided
  • (1 large) onion, chopped
  • (1 1/2 Tbsp.) Mexican seasoning
  • (3 Tbsp.) Worcestershire sauce
  • (3 Tbsp.) cider vinegar
  • (3 Tbsp.) molasses
  • (1 tsp.) dry mustard
  • (1 6-oz. can) tomato paste
  • (3/4 tsp.) pepper
  • (1/4 tsp.) salt
  • (1 2 lb.) boneless pork loin roast
  • (8 2 1/4-oz.) whole wheat hamburger buns, halved

Slow Cooked Pulled Pork Sandwiches

A brown-sugar rubbed pork loin simmered in a sweet and tangy sauce, shredded and served on whole-wheat buns.

    Instructions

  1. 1In an electric slow cooker, combine 3 Tbsp. brown sugar, onion, Mexican seasoning, Worcestershire sauce, cider vinegar, molasses, dry mustard and tomato paste.

  2. 2In a separate bowl, combine 1 Tbsp. brown sugar, pepper and salt. Cut the pork loin into 4 even pieces, then coat pork loin with the mixture, rubbing it into the meat.

  3. 3Add meat to slow cooker, coating with sauce. Cover, cook on high for 1 hour.
  4. 4After an hour, reduce heat to low and cook 7 more hours or until tender.
  5. 5Transfer pork onto a cutting board. Use 2 forks to shred the pork, then place it back into the cooker, stirring to combine it with the sauce.
  6. 6To assemble sandwiches, top each bun half with 2/3 cup pork and cover with other bun half. Enjoy!
