Spice Rubbed Chicken Pitas

Ingredients:
  • (1 lb.) boneless, skinless chicken breasts, trimmed
  • (1 1/2 tsp.) garam masala, divided
  • (3/4 tsp.) kosher salt, divided
  • (1 cup) seeded cucumber, thinly sliced
  • (3/4 cup) nonfat plain yogurt
  • (1 Tbsp.) fresh cilantro or mint, chopped
  • (2 tsp.) lemon juice
  • Freshly ground pepper, to taste
  • (4 6-in.) whole-wheat pitas, warmed and halved
  • (1 cup) shredded romaine lettuce
  • (1 large) tomato, sliced
  • (1/4 cup) red onion, thinly sliced

Spice Rubbed Chicken Pitas

Indian spiced chicken served in whole-wheat pitas with a cool, cucumber yogurt, lettuce tomato and onion.

    Instructions

  1. 1With oven rack in upper third position, preheat broiler. Spray a broiler pan with cooking spray.
  2. 2Season both sides of chicken with 1 tsp. garam masala and 1/2 tsp. salt. Broil 8-16 minutes, flipping halfway through. Place on a cutting board and set aside 5 minutes.

  3. 3In a small bowl, mix together cucumber, yogurt, cilantro, lemon juice, 1/2 tsp. garam masala and 1/4 tsp. salt and pepper. Slice the chicken.
  4. 4Fill each pita with chicken, yogurt sauce, lettuce, tomato and onion and serve.
