Turkey Taco Chili
Ingredients:
- (2 Tbsp.) canola oil
- (2 1/2 lb.) lean ground turkey
- (2 1-oz. packages) taco seasoning
- (2 tsp.) ground coriander
- (2 tsp.) dried oregano
- (1 tsp.) chili pepper flakes (optional)
- (2 cups) low-sodium chicken broth
- (2 cups) mild salsa
- (4 cups) canned, crushed tomatoes in puree
- (7 oz. can) chopped green chili peppers
- (1 large) onion, finely chopped
- (2) green bell peppers, diced
- (5 medium) zucchinis, halved lengthwise and sliced
- (1 1/4 cups) shredded, reduced-fat Jack or cheddar cheese
- (1 bunch) green onions, chopped
- (1 1/4 cups) fat-free sour cream
- (1 large) avocado, peeled, pitted and diced

Instructions
- 1Place a large nonstick skillet over medium-high heat. Add oil. Add ground turkey and use a wooden spoon to break it up. Cook 4 minutes, stirring occasionally.
- 2Add taco seasoning, coriander, oregano and chili flakes. Cook another 3-4 minutes, or until turkey is browned.
- 3Stir in chicken broth, salsa, tomatoes, green chilies, onion, bell pepper and zucchini. When boiling, cover, reduce heat and simmer 10-15 minutes.
- 4Serve with cheese, green onions, sour cream and avocado on top*, enjoy!
