Instructions
1Place a large skillet over medium-high heat. Add 1 Tbsp. oil.
2Process tofu in a blender or food processor until smooth, set aside.
3Add corn, mushrooms, scallions and red pepper to skillet, cook 3-5 minutes, stirring occasionally. Add garlic and cumin, stir to combine and cook another minute. Remove from heat.
4Add carrot, potato, tofu, a sprinkle of salt and pepper and bread crumbs. Stir until mixture starts to stick together. Shape into 4 equal patties.
5Place skillet back over medium high heat and add 2 Tbsp. olive oil. Cook patties in skillet about 6 minutes, flipping once. Serve on whole wheat buns, if desired.
